Recipe: Halloumi Chips...deliciously different !
- 1 ‘log’ of halloumi cheese
- 1 tablespoon flour
- Vegetable oil for frying (enough to fill a medium saucepan to a depth of about half an inch)
- Separate bowls of sour cream and sweet child sauce (Or you can serve with Tzatziki...yumm)
- Cut the halloumi cheese into roughly equal sized 'chips'.
- Roll the ‘fries’ in the flour.
- Heat up the oil in your fryer. Then, carefully lower the chips into the oil.
- Fry for a couple of minutes or until golden and crunchy-looking (you might have to do this in 2 or more batches).
- Remove carefully from the oil, drain and serve immediately with the sour cream and sweet chilli sauce.
Keeping ahead of food trends: NAFEM 2017
Michael Brick recently attended NAFEM 2017 - one of the largest food conferences in the world . NAFEM draws 1000s of passionate foodies from all around the globe and is a great place to keep up to date with new food equipment innovations.
Perfect Fry had a display at the event and the head of engineering shared some exciting news and planned product enhancements with Michael. There were some prototype units on display but there is no confirmation of when the developments will be finalised and will be available in Australia - watch this space and we will keep you posted !!
One of the other interesting new technologies on display was the ‘Prism ICG Technology’ by Magikitch'n. This is a new technology that guides the cook through a perfectly repeatable colour-coded cooking process. Laser lights are used to section the griddle and communicate when and where on the plate you can add a product, when you should flip it, and when it is ready! The Prism ICG technology improves product consistency, saves labour and improves food safety.
We were also able to secure some new innovative products to bring to the Aus/NZ market. We will be able to communicate these with you in coming months as we start getting stock into the country.
Top tips for keeping your food fresher for longer
The heat is well and truly on and we have a few hot tips to minimise your food wastage and keep your food fresher for longer:
1. Make sure there is adequate ventilation around the compressor
(Don't block fresh air intake and allow the warm air to escape from the air vents)
2. Clean the condenser face monthly
3. Don't overload the cabinet
4. Ensure food is cold when it goes in the cabinet
5. Be sure not to cover the vents in the units with plates or trays
Raising the bar in grocery retailing: Richies Dromana
Ritchies Dromana has had an up-market make-over with the local supermarket being the first of a new concept for the Ritchies brand and includes artisan bread, hand-rolled sushi, dry aged beef, specialist cheeses and a huge take-home (re-heat and eat) and hot food offer including roast meats, fried chicken, seafood and baked potatoes.
Much of the produce and products are sourced locally or produced on site including freshly squeezed juice, fresh ground peanut butter and even fresh popped popcorn.
The store has been completely re-designed and refurbished to accommodate the new gourmet offer and visiting chefs have been employed to conduct live cooking demonstrations to add some extra theatre and ambience to the store.
The new format is paying dividends too with sales up 50 percent on the same time last year. Meris supplied equipment for this new concept including Perfect Fryers in the Deli and Sushi Bar and a King Edward Potato oven.

The perfect accompaniment to waffles or pancakes, take advantage of delicious Summer Fruits with this simple Summer Fruit Compote recipe…delicious !!!
- 4 large plums, , stoned and cut into wedges
- 200g punnet blueberries
- zest and juice 1 orange
- 25g soft light brown sugar
- 150g punnet raspberry
- thick yogurt or cream
- and honey, to serve (optional)
- Cook the plums and blueberries in a small pan with the orange zest and juice, sugar and 4 tbsp water until slightly softened but not mushy. Gently stir in the raspberries and cook for 1 min more.
- Remove from the heat and allow to cool to room temperature. Serve with yogurt or cream and a drizzle of honey, if you like.

Recipe: Roast Pumpkin and Chorizo Pizza
A quick and tasty pizza, recipe courtesy of Taste.com
800g butternut pumpkin
1 tablespoon olive oil
170g tomato paste
2 cups coarsely grated mozzarella
2 x chorizo thinly sliced
1 long red chilli (optional) thinly sliced
1 spring onion thinly sliced
Pizza Dough or Pita Breads
- Preheat oven to 200°C.
- Place the pumpkin on a lined baking tray. Drizzle with oil. Season. Toss to combine. Roast for 15 minutes or until almost tender.
- Roll out dough into 2 large pizzas (or pita breads) and place on 2 large baking trays.
- Spread with tomato paste. Top with mozzarella, chorizo, pumpkin, chilli and spring onion.
- Bake for 10 minutes or until golden and crisp. Top with salad mix.

Same great menu in a kiosk environment thanks to the Perfect Fryer !
The latest Degani Café opening, is a kiosk located in Westfield Doncaster. "This is one of a few kiosk layouts that Degani currently have, however they are looking at expanding over the next couple of years said James Marshall, National Store Development Manager for Degani. "The kiosk format is one of models that we see real growth potential in. We are looking to open 40 more Degani outlets over the next 12 months alone throughout Australia."
Meris Food Equipment have supplied some of the equipment for the latest fit-out, which includes a Perfect Fryer. In a kiosk environment there is less infrastructure such as exhaust hoods and reduced kitchen space. The Perfect Fryer was suggested as it enabled Deganis to produce the freshly fried food options on their menu despite the non-typical environment. “Given Degani wanted to include some of their most popular fried menu items, even in this smaller format store, the best solution was the installation of a Perfect Fryer, said Andrew Brick at Meris Food Equipment. We worked with the Degani team through the design process to come up with the best solution to meet their business needs”.
Aside from the small footprint and being completely self-contained, the Perfect Fryer has the added benefit of being automated to produce a consistently high quality product. "We were impressed with the quality of food the fryer produced, right from the trial cooking our chefs did, but additionally, all staff members cooking will now be able to produce those results, said Mr Marshall. Keeping up with international trends in Dubai
Michael Brick, Director of Meris Food Equipment has just returned from Dubai where he attended Gulfood 2016. The show had more than 90,000 attendees from more than 160 countries.

Recipe: Classic Fish n Chips
Back to Basics with this classic recipe which is appropriate in multiple environments including bars and clubs, service stations, cinemas and cafes, there is nothing that is simpler yet so appealing as fish n chips.
The recipe is simple to serve with little preparation required, no waste and handsome profits. As the fish and chips are cooked straight from the freezer there is no compromise on quality and freshness.

1. Take fish and chips from freezer and put into the Perfect Fryer.
2. Cook at 180 degrees for 3 minutes 10 seconds than drain for 14 seconds (The Prefect Fryer can perform this automatically when programmed)

Wendy's add hot chips and deliver fast success
The roll-out of Perfect Fryers into 150 Wendy’s stores was successfully completed in October and early indications are extremely positive.
“Based on sales from the trial sites and sites that installed machines prior to the roll out, the return on investment is potentially going to be very fast for many owners” according to Michael Brick, General Manager of Meris Food Equipment
Wendy’s was purchased in mid 2014 by Supatreats Australia. Supatreats introduced a range of new products, including hot chips, to assist in revitalising the brand and appeal to a broader target market.
“Hot Chips are a universal product that appeal to multiple market segments in all seasons. The Perfect Fryer is perfect for the Wendy’s environment as it has a very small footprint and is able to be used in kiosks due to its in-built filtration system.” said a Supatreats spokesperson.

How's this for an innovative, delicious twist on a jaffle...
Ingredients Mr Waffle, waffle mix
Spiced apples for apple pie (tinned)
- Combine waffle mix, water and oil.
- Spray Neumärker Waffle iron with oil spray
- Pour in waffle batter then cook for 2 minutes at 200 degrees.
- Trim cooked waffles to bread size.
- Spay Neumärker jaffle iron place the apple and cinnamon sugar between the two waffles and cook in jaffle iron for 2 minutes at 200 degrees.
- Enjoy with ice cream or cream ....delicious !!
A Savoury Alternative....
Repeat the steps above but replace the apple and
cinnamon sugar with cooked middle bacon rashes,
gruyere cheese slices and real Canadian maple syrup

Thanks to everyone that came to visit at Fine Foods this week. We had a great time catching up with old and new faces. BP Smeaton Grange
We are proud to have been the food equipment supplier for the new BP site at Smeaton Grange, operated by Eddy Nader.
Eddy engaged a retail designer for his new site and the brief was to create a modern, customer focused “café” feel that would drive increased food sales for the surrounding industrial businesses and passing traffic.
The greenfield site afforded Eddy design flexibility. A long food counter was designed that enabled the cooking equipment – Perfect Fryer, Speed Oven and Regular Oven to be located at the back of the counter. The display equipment – Kentucky Hot Display for unwrapped cooked product, Cossiga heated cabinets for pies and pastries and refrigerated cabinets for sandwiches and cold pastries is on the front counter enabling customers to clearly see the range of food on offer. “This design enables console staff to serve and cook food with ease.” said Michael Brick of Meris Food Equipment.
“The cooking equipment we selected is all automated for a consistent result every time and is safe and simple to use. It has provided us with the opportunity to introduce a diverse range of new food that is proving popular with our customers” said Eddy. “ Five weeks in we are seeing daily food sales growth and are confident we are going to achieve our lofty sales targets”

Hot Potatoes to suit all tastes
King Edward has been making quality specialised potato ovens in England for nearly 30 years. They are the benchmark in quality and presentation and not only cook potatoes to perfection but display them in such an appealing way that the potatoes sell themselves!
There are many models and sizes to suit all kinds of applications. The traditional look and quality potato that is cooked makes these a great choice for many applications and environments and the flexibility of toppings ensures you can appeal to all market segments.

Ricotta, Salami and Basil Jacket Potatoes
4 roasted potatoes
40g thinly sliced salami
1 ½ cups fresh ricotta
2 tablespoons milk
½ cup grated parmesan
½ cup basil leaves
Vincotto for drizzling
While the potatoes are cooking, place the salami on an oven tray lined with non-stick baking paper. Cook for 4-5 mins until golden and crispy. Set aside
Place the ricotta, milk and parmesan in a bowl and mix to combine. Using a sharp knife make a slit in the potatoes and squeeze the sides to open. Fill with the ricotta mixture, salami and basil. Top with extra parmesan and drizzle with vincotto to serve. Serves 4.
NOTE: Vincotto is a sweet reduced vinegar available at selected supermarkets and delis. You can use caramelised balsamic vinegar instead.
